The Adamo Canel winery is a marvel to behold. In the beautiful hills of Piedmont, they take great care in keeping up with traditional wine making practices that have long been passed down through generations. Every year their vineyard produces exceptional wines and spumanti for us to enjoy!
The process starts when we respect our environment by running this sustainable business on hillside land planted exclusively with grape vines: from harvesting grapes by hand using ancient tools like scissors or batonnete (a tool used during harvest) all the way back through crushing them gently so as not to release too much juice--we ferment under controlled temperature until only one week before bottling where it turns into sparkling wine in closed vat.
